Cheesy Bacon Stuffed Avocados

These creamy, savory stuffed avocados make a perfectly satisfying low carb meal or snack.

How to make it

    Get started by cooking your bacon until it is wonderfully crisp. You can do this in a skillet or bake it in the oven. Once cooked, let it cool a little and then crumble it into small pieces.

    Carefully slice each avocado in half lengthwise and remove the pits. Scoop out about a tablespoon of avocado flesh from the center of each half, creating a little well for your filling.

    In a mixing bowl, combine the softened cream cheese, about half of the crumbled bacon, and three quarters of the shredded cheddar cheese. Stir everything together until it is well blended.

    Spoon the creamy cheese mixture generously into the hollowed out avocado halves. Sprinkle the remaining crumbled bacon and cheddar cheese right over the top.

    Place the stuffed avocados on a baking sheet. Pop them into a preheated oven at 375F (190C) for about 8 to 10 minutes, just until the cheese is bubbly and golden. Garnish with fresh chives before serving.
