Pat the chicken dry and season generously with salt and black pepper. In a large skillet over medium high heat, sear the chicken thighs for about 5 to 7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

Add the chopped bell pepper to the same skillet, stirring and cooking for 3 to 4 minutes until it starts to soften. If the skillet is too dry, a tiny bit of water or chicken broth can be added.

Reduce the heat to medium low. Add the cream cheese to the skillet and stir constantly, allowing it to melt and create a creamy base.

Once the cream cheese is mostly melted, add the fresh spinach. Stir it in gradually, letting it wilt into the creamy sauce. This will take just a couple of minutes.
