Cozy Coconut Lentil Soup
This comforting and hearty soup is so easy to make and bursting with flavor.

How to make it

Rinse the red lentils thoroughly under cold water until the water runs clear. This helps prevent them from clumping.

In a large pot or Dutch oven, combine the rinsed lentils, diced tomatoes, coconut milk, and curry powder. Add 3 cups of water.

Bring the mixture to a boil over medium-high heat. Then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the lentils are tender.

Stir in the fresh spinach a few handfuls at a time. Cook just until the spinach wilts, which should only take a couple of minutes.
