These succulent pork chops are pan fried and coated in a rich, tangy cream sauce with wilted spinach, perfect for a quick and satisfying low carb meal.

Pat your pork chops dry with a paper towel. Season them generously with salt and pepper on both sides.

Heat a skillet over medium high heat with a tablespoon of your favorite cooking oil. Once hot, sear the pork chops for about 4 minutes per side, until beautifully golden brown and cooked through. Remove them from the skillet and set aside on a plate to rest.

In the same skillet, reduce the heat to medium. Pour in the heavy cream and whisk in the Dijon mustard. Let it gently simmer for a couple of minutes until it starts to thicken slightly.

Stir in the fresh spinach a handful at a time, letting it wilt into the creamy sauce. Once all the spinach is wilted, stir in the grated Parmesan cheese until it's melted and smooth. Taste the sauce and add a pinch more salt or pepper if you like.
