5Creamy Lemon Dill Salmon Skillet
Savor this rich, easy salmon dish featuring a bright herby cream cheese topping and tender wilted spinach.
How to make it
- 1
Start by patting your salmon fillets very dry with a paper towel. This helps with a nice crispy skin. Season both sides with salt and pepper.
- 2
In a small bowl, whisk together the softened cream cheese, fresh chopped dill, and the zest from half of your lemon. Set this aside.
- 3
Heat your favorite oven-safe skillet over medium-high heat. Once hot, add the salmon fillets, skin-side down, and let them cook for about 4-5 minutes until the skin is wonderfully crispy.
- 4
Carefully flip the salmon. Now, generously spread that delicious cream cheese mixture over the top of each fillet.
- 5
Tuck the fresh spinach around the salmon in the skillet. You can then cover the skillet with a lid, or pop it into a preheated oven at 375°F (190°C) for another 8-10 minutes, or until your salmon is cooked just how you like it and the spinach has beautifully wilted. A final squeeze of fresh lemon juice over everything just before serving really brightens it up. Enjoy your delicious, low-carb meal!
