First things first, pat your sirloin steaks really dry with paper towels. This helps them get a beautiful sear. Season both sides generously with salt and pepper.

Heat a large skillet over medium-high heat. Add just a touch of olive oil or butter to coat the bottom. Once it's shimmering, carefully place your steaks in the pan.

Sear the steaks for about 3 to 5 minutes per side for a perfect medium-rare. If you prefer them more done, cook a little longer. Remove the steaks from the skillet and let them rest on a plate, tented loosely with foil, while you make the sauce.

Reduce the heat to medium. Add the sliced mushrooms to the same skillet and cook, stirring occasionally, until they release their liquid and turn a lovely golden brown. This usually takes about 5 to 7 minutes.

Stir in the minced garlic and cook for just another minute until you can smell that wonderful aroma. Pour in the heavy cream and bring it to a gentle simmer. Let it bubble lightly for 2 to 3 minutes until the sauce thickens slightly. Finally, stir in the fresh parsley.
