5Creamy Paprika Chicken Skillet
This creamy, flavorful chicken dish comes together quickly for a satisfying weeknight meal.
How to make it
- 1
Start by cutting your chicken breasts into bite sized pieces. You want them to be roughly the same size so they cook evenly.
- 2
Heat a large skillet over medium high heat with a tiny splash of oil. Add the chicken pieces and cook until they are nicely browned on all sides and cooked all the way through. This should take about 5 to 7 minutes. Remove the chicken from the skillet and set it aside for a moment.
- 3
Add the chopped red bell pepper to the same skillet. Cook them for about 3 to 4 minutes until they are slightly softened but still have a bit of a bite.
- 4
Stir in the smoked paprika. Cook for just one more minute, stirring constantly, until you can really smell that wonderful aroma. It adds so much flavor!
- 5
Now, add the fresh spinach to the skillet. Let it cook down until it's completely wilted, then return the cooked chicken pieces to the skillet.
- 6
Turn off the heat. Stir in the plain Greek yogurt until everything is beautifully coated and looks wonderfully creamy. Season with a pinch of salt and a grind of pepper to your liking. Serve it right away and enjoy this hearty meal!
