Dijon Pork Chops with Cheesy Bacon Brussels

Savory pork chops paired with tender Brussels sprouts, crispy bacon, and a delightful cheesy Dijon sauce, perfect for a low-carb meal.

How to make it

    Pat the pork chops dry and season generously with salt and black pepper on both sides. Let them sit while you prepare other ingredients.

    Preheat a large oven-safe skillet or a cast iron pan over medium-high heat. Add the bacon slices and cook until crispy. Remove the bacon, place it on a paper towel lined plate, and crumble it once cooled. Leave the bacon fat in the skillet.

    Trim the ends of the Brussels sprouts and halve them. Add the halved Brussels sprouts to the skillet with the bacon fat. Cook for 5-7 minutes, stirring occasionally, until they start to brown and soften.

    Push the Brussels sprouts to one side of the skillet. Add the pork chops to the empty side of the skillet and sear for 3-4 minutes per side until a nice crust forms.

    Reduce the heat to medium-low. In a small bowl, whisk together the Dijon mustard with a splash of water, just enough to thin it slightly. Drizzle the mustard mixture over the pork chops and Brussels sprouts.

    Sprinkle the shredded cheddar cheese over the Brussels sprouts. Cover the skillet with a lid or foil and let it cook for another 5-7 minutes, or until the pork chops are cooked through (internal temperature of 145F/63C) and the cheese is melted and bubbly.
