Let your steaks come to room temperature for about 15 to 20 minutes before cooking. This helps them cook more evenly. Pat them very dry with paper towels. Season generously with salt and pepper on all sides.

While the steaks are resting, prepare your blue cheese butter. In a small bowl, mash together the softened butter, crumbled blue cheese, finely minced garlic, and finely chopped fresh rosemary. You can do this with a fork.

Heat a heavy bottomed skillet or cast iron pan over high heat until it is smoking slightly. Add your steaks to the hot pan. Sear for 3 to 5 minutes per side for medium rare, adjusting time for your desired doneness.

Remove the steaks from the pan and immediately top each one with half of the blue cheese butter. The residual heat will melt the butter and create a wonderfully rich sauce.
