Garlic Shrimp with Burst Cherry Tomatoes

How to make it

First, pat your shrimp dry with a paper towel. This helps them get a lovely sear.

Heat the olive oil in a large skillet over medium-high heat. Once shimmering, add the sliced garlic and cook for about 30 seconds until fragrant, but do not let it brown.

Add the cherry tomatoes to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until many of them have burst and released their juices.

Now, add the shrimp to the skillet. Cook for 2 to 3 minutes per side, or until they turn pink and opaque. They cook very quickly.
