Garlicky Broccoli Orecchiette

This simple pasta dish is incredibly satisfying and comes together in a flash.

How to make it

    Bring a large pot of generously salted water to a rolling boil. Add the orecchiette pasta and cook according to package directions until it is al dente.

    While the pasta cooks, take your fresh broccoli and chop it into small, bite sized florets. Finely mince the garlic cloves.

    About 3 minutes before the pasta is expected to be done, add the broccoli florets directly into the boiling pasta water. This will gently steam them to perfection.

    Carefully drain the pasta and broccoli, making sure to reserve about half a cup of the starchy pasta cooking water.

    Return the drained pasta and broccoli to the empty pot. Add the minced garlic, nutritional yeast, and extra virgin olive oil. Stir everything together really well. If you like a slightly saucier texture, add a splash or two of the reserved pasta water until it reaches your desired consistency. Serve this comforting dish immediately and enjoy!
