How to make it

First, get all your ingredients ready. Peel and roughly chop the carrots, peel and finely mince the fresh ginger, and chop your yellow onion into small pieces.

Heat a large pot over medium heat. Add a splash of olive oil if you like, then toss in the chopped onion and ginger. Cook them gently for about 5 minutes until they are soft and fragrant.

Now add the chopped carrots to the pot. Pour in the vegetable broth, making sure the carrots are mostly submerged. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the carrots are very tender.

Carefully transfer the cooked carrots and broth mixture to a blender. Blend until the soup is completely smooth and creamy. Be careful when blending hot liquids; you might need to do it in batches or leave the lid ajar slightly to allow steam to escape.

Pour the blended soup back into the pot. Squeeze in the juice from your large orange. Give it a good stir. Taste and add salt and pepper if you wish. Warm through for a couple of minutes and serve hot.
