5Hearty Mediterranean Stuffed Peppers
These vibrant bell peppers are filled with a savory blend of turkey, lentils, and feta, offering a delicious and protein-packed meal.
How to make it
- 1
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- 2
Carefully cut each bell pepper in half lengthwise. Remove the seeds and membranes. You can lightly spray a baking dish with cooking spray if you like.
- 3
In a large skillet, brown the ground turkey over medium heat. Make sure to break it up as it cooks. Once it is no longer pink, drain any excess fat.
- 4
Add the drained green lentils and the undrained diced tomatoes to the skillet with the turkey. Stir everything together and let it simmer for about 5 minutes to combine the flavors.
- 5
Remove the skillet from the heat. Stir in the crumbled feta cheese. Season with a little salt and pepper to your taste.
- 6
Spoon the turkey and lentil mixture evenly into the bell pepper halves, filling them generously.
- 7
Arrange the stuffed peppers in your baking dish. You can add a splash of water to the bottom of the dish to help them steam a bit, about 1/4 cup.
- 8
Bake for 30 to 35 minutes, or until the peppers are tender and the filling is heated through. Enjoy your delicious and wholesome meal!
