Preheat your oven to 375°F (190°C). Carefully halve the bell peppers lengthwise and remove the seeds and membranes. You can keep them whole and just cut off the top if you prefer more of a "bowl".

In a medium bowl, combine the cooked quinoa, rinsed black beans, frozen corn, and salsa. Stir everything together until it's well mixed.

Spoon the quinoa and bean mixture generously into each bell pepper half. Arrange the stuffed peppers in a baking dish.

Bake for 30 to 35 minutes, or until the peppers are tender and the filling is heated through. If you like, you can add a little extra salsa on top before serving.
