Get your pork tenderloin ready. Pat it dry with a paper towel and season generously with salt and black pepper all over.

Heat a skillet over medium-high heat with a little olive oil. Once hot, sear the pork tenderloin for about 3 to 4 minutes per side until it's nicely browned all around.

Transfer the seared pork to a baking dish or sheet. Roast it in a preheated oven at 400 degrees F (200 degrees C) for 10 to 15 minutes, or until it reaches an internal temperature of 145 degrees F (63 degrees C). While the pork roasts, steam or lightly boil your broccoli florets until tender-crisp, about 5 to 7 minutes.

While the pork rests for a few minutes after coming out of the oven, whisk together the Greek yogurt, Dijon mustard, and fresh thyme leaves in a small bowl. Add a pinch of salt and pepper to taste.
