Lemon Herb Baked Cod with Roasted Asparagus

    Get your oven nice and hot to 200°C (400°F). Line a baking sheet with parchment paper for easy cleanup.

    Wash the asparagus well and snap off the tough woody ends. Toss them on the baking sheet with 1 tablespoon of olive oil, a pinch of salt, and some freshly ground pepper.

    Gently pat your cod fillets dry with a paper towel. This helps them get a lovely golden crust. Place them on the same baking sheet next to the asparagus.

    Drizzle the remaining 1 tablespoon of olive oil over the cod. Sprinkle generously with fresh dill, the zest from half the lemon, and a good pinch of salt and pepper.
