How to make it

  1. 1

Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.

  2. 2

In a small bowl, combine the panko breadcrumbs, chopped fresh parsley, and the zest of one lemon. Drizzle in 1 tablespoon of olive oil and mix until the breadcrumbs are moistened.

  3. 3

Pat the cod fillets dry with paper towels. Place them in the prepared baking dish. Squeeze the juice of half the lemon over the fish, then season lightly with salt and pepper if desired.

  4. 4

Evenly press the panko mixture onto the top of each cod fillet, creating a nice crust. Drizzle the remaining 1 tablespoon of olive oil over the crusted fish.

  5. 5

Bake for 12 to 15 minutes, or until the cod is opaque and flakes easily with a fork. Serve immediately with extra lemon wedges if you like.
