5Lemony Dill Salmon & Asparagus Skillet
This quick and healthy skillet meal brings bright flavors and creamy textures to your low-carb table in a snap.
How to make it
- 1
Pat the salmon fillets dry with a paper towel. Season them lightly on both sides with salt and pepper.
- 2
In a small bowl, combine the softened full-fat cream cheese with the chopped fresh dill. Add a small squeeze of lemon juice to the mixture.
- 3
Heat a large skillet over medium-high heat. You can add a tablespoon of olive oil if desired. Place the salmon fillets skin-side down in the hot skillet and cook for 4-5 minutes until the skin is crispy.
- 4
Flip the salmon fillets. Carefully spread the dill cream cheese mixture generously over the top of each fillet. Arrange the asparagus spears around the salmon in the skillet. Add about 1/4 cup of water to the pan and cover quickly.
- 5
Let the asparagus steam for 5-7 minutes or until it is tender-crisp. Finish the dish by squeezing fresh lemon juice over everything before serving immediately.
