5Mediterranean Chicken with Burst Tomatoes
This simple, flavorful dish brings the vibrant tastes of the Mediterranean right to your kitchen table.
How to make it
- 1
Pat the chicken thighs dry with paper towels. Season them lightly with salt and pepper on both sides.
- 2
Heat a large oven safe skillet over medium high heat with a touch of cooking oil. Once hot, carefully place the chicken thighs in the skillet.
- 3
Sear the chicken for 5 to 7 minutes per side, until they are beautifully golden brown and have a nice crust. The goal is to get a good color on them.
- 4
Reduce the heat to medium. Scatter the cherry tomatoes and Kalamata olives all around the chicken in the skillet. Sprinkle the dried oregano evenly over everything.
- 5
Transfer the skillet to a preheated oven set at 375°F (190°C). Roast for 15 to 20 minutes, or until the chicken is fully cooked through and the tomatoes have softened and burst open.
- 6
Carefully remove the skillet from the oven. Generously crumble the feta cheese over the hot chicken and vegetables. Serve immediately and enjoy the delightful flavors.
