Mediterranean Tilapia with Olive-Caper Relish

How to make it

    First things first, get your relish ready. In a small bowl, combine the chopped Kalamata olives, drained capers, and fresh oregano. Set this flavorful mix aside.

    Now, pat your tilapia fillets really dry with a paper towel. This helps them get a nice sear. Season both sides generously with a little salt and pepper.

    Heat two tablespoons of the olive oil in a large non-stick skillet over medium-high heat. Once the oil is shimmering, carefully add two tilapia fillets to the pan. Don't overcrowd it, we want a good sear!

    Cook the fillets for about 3 to 4 minutes per side, until they are golden brown and flake easily with a fork. Remove them from the pan and set them aside on a plate.

    Add the remaining tablespoon of olive oil to the pan and repeat with the last two fillets. Once all the fish is cooked through and flaky, carefully transfer it to plates and spoon that delicious olive-caper relish right over the top of your fish.
