5Seared Scallops with Burst Tomatoes and Basil
Quick and elegant, these perfectly seared scallops with sweet burst tomatoes and fragrant basil are a weeknight delight.
How to make it
- 1
Prepare the scallops by patting them very dry with paper towels. This step is important for achieving a beautiful golden sear.
- 2
Mince the garlic finely and roughly chop the fresh basil leaves. If your cherry tomatoes are large, you might want to halve them.
- 3
Heat the olive oil in a large skillet over medium high heat until it starts to shimmer. This indicates it is hot enough to sear.
- 4
Add the scallops to the hot pan in a single layer, making sure not to overcrowd the pan. Sear them for 2 to 3 minutes per side until they are golden brown and opaque in the center. Remove the seared scallops from the pan and set them aside.
- 5
Add the cherry tomatoes and minced garlic to the same skillet. Cook for 5 to 7 minutes, stirring occasionally, until the tomatoes begin to burst and soften into a lovely sauce.
- 6
Stir in the chopped basil. Return the seared scallops to the pan and gently toss everything together for about 30 seconds, just enough to warm them through. Season with salt and pepper to your liking. Serve immediately and enjoy your delicious meal!
