Speedy Peanut Lime Noodles

    Start by getting a large pot of water boiling for your pasta. Add a pinch of salt to the water, it makes a big difference.

    While the water heats up, finely mince your garlic cloves. You can use a garlic press if you have one.

    In a medium bowl, whisk together the peanut butter, soy sauce, the juice from your lime, and the minced garlic. If the sauce is too thick, add a tablespoon or two of the hot pasta water to thin it out until it is creamy and smooth.
