    First, get your ingredients ready. Peel and dice the yellow onion and sweet potatoes into bite-sized cubes. They do not have to be perfect, just similar in size so they cook evenly.

    Grab a medium sized pot or Dutch oven and set it over medium heat. Add a tiny splash of oil, if you like, then toss in your diced onion. Cook the onion for about 5 minutes until it starts to soften and turn a bit translucent.

    Now, add the diced sweet potatoes to the pot along with the curry powder. Stir everything well, making sure those sweet potato cubes get nicely coated in that fragrant spice. Let it cook for another 2 minutes, stirring occasionally.

    Pour in the drained and rinsed chickpeas, then follow with the creamy full-fat coconut milk. Give it a good stir to combine all the delicious flavors.
