Dice your chicken breast into bite-sized pieces. Peel and dice the sweet potato into similar small cubes, about half an inch. Chop your red onion finely.

Heat a large nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until it is browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.

Add the diced sweet potato and red onion to the same skillet. You might need a tiny splash of water if it is too dry, but usually a good nonstick pan is fine. Cook, stirring often, until the sweet potato is tender and slightly caramelized, about 10 to 15 minutes.

Return the cooked chicken to the skillet with the sweet potatoes and onions. In a small bowl, whisk together the peanut butter and sriracha with a tablespoon or two of water until it forms a smooth, pourable sauce.
