How to make it

  1. 1

First things first, let's press that tofu! Gently remove the extra-firm tofu from its package and drain any water. Place the block between a few layers of paper towels or a clean kitchen towel. Put a heavy object like a cast iron skillet or a few cookbooks on top and let it press for at least 20 minutes to remove excess water. This step is key for crispy tofu.

  2. 2

While the tofu is pressing, whisk together the soy sauce, maple syrup, and rice vinegar in a small bowl. This is your delicious glaze.

  3. 3

Once pressed, pat the tofu dry and cut it into bite-sized cubes, about 1 inch. You can also cut them into triangles or sticks, whatever shape you fancy.

  4. 4

Heat a large non-stick pan over medium-high heat. Add a little oil (if using, not counted as an ingredient) and once hot, add the tofu cubes in a single layer. Cook for about 5 to 7 minutes, flipping occasionally, until all sides are golden brown and a little crispy.

  5. 5

Pour the prepared glaze over the crispy tofu. Stir gently to coat every piece. Let the sauce simmer and thicken for about 2 to 3 minutes, until it clings beautifully to the tofu.

  6. 6

Remove from heat, sprinkle generously with the toasted sesame seeds, and toss once more. Serve your sticky maple sesame tofu warm. It's wonderful over rice or with steamed greens. Enjoy!
