Sunshine Feta and Tomato Pasta

This vibrant pasta dish brings sunshine to your plate with fresh tomatoes and salty feta.

How to make it

    Get a pot of water boiling for your pasta. Make sure to salt it generously.

    While the water heats up, gently wash your cherry tomatoes and slice them in half.

    Once the water is boiling, add your orecchiette pasta and cook according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.

    In a large bowl, combine the halved cherry tomatoes, fresh basil leaves (you can tear larger ones if you like), and crumbled feta cheese.

    Add the hot, drained pasta to the bowl with the other ingredients. Pour in the good quality olive oil and a splash or two of your reserved pasta water. Toss everything gently until well combined and the feta starts to melt slightly, creating a lovely sauce. Season with a little salt and pepper to taste. Serve immediately and enjoy your delicious meal!
