Zesty Black Bean and Corn Power Salad

This vibrant, refreshing salad is packed with flavor and super easy to whip up for a healthy meal.

How to make it

    First, drain and rinse your black beans really well under cold water. This makes them taste fresh. Set them aside in a big mixing bowl.

    If you are using frozen corn, let it thaw for a bit or quickly run it under warm water. If canned, just drain it. Add the corn to the bowl with the beans.

    Dice up your ripe avocados. Make sure they are soft but not mushy. Add the lovely green avocado cubes and the finely diced red onion to the bowl.

    Pour the fresh lime juice over everything. This gives it such a bright, zesty kick.

    Gently toss all the ingredients together until they are nicely combined. You can add a pinch of salt and pepper if you like. Serve this refreshing salad immediately and enjoy.
