Let's start by preparing the refreshing slaw. Finely shred your green cabbage. You can use a knife or a mandoline if you have one. Place it in a medium bowl.

For the slaw dressing, grate about half of your fresh ginger into a small bowl. Squeeze the juice from one of your large limes into the same bowl. Add a pinch of salt and pepper, then whisk it all together. Pour this dressing over the shredded cabbage and toss well to combine. Set it aside to let the flavors meld.

Now, for the star of the show, the flounder. Pat your flounder fillets dry with paper towels. Season both sides with salt and pepper.

Grate the remaining fresh ginger over both sides of the flounder fillets.

Heat a tablespoon of olive oil in a non-stick skillet over medium-high heat. Once the pan is hot, carefully place the flounder fillets in. Sear for just 2-3 minutes per side. Flounder cooks very quickly, so watch it closely. It's done when it's opaque and flakes easily.
