Wash and chop the potatoes into 1-inch cubes. You can peel them if you like, but it is not necessary.

In a large bowl, combine the chopped potatoes with the olive oil. Zest one lemon directly over the potatoes, then squeeze the juice from both lemons over them.

Finely mince the garlic cloves and strip the fresh rosemary leaves from their stems, then chop the rosemary. Add both the garlic and rosemary to the potato mixture. Toss everything together until the potatoes are evenly coated. Season generously with salt and pepper.
