How to make it

First, rinse your red lentils very well. Place them in a pot with 3 cups of water. Bring this to a boil, then reduce the heat to a gentle simmer. Cook for about 15 to 20 minutes, or until the lentils are tender. Make sure to drain any extra water after cooking.

While the lentils are cooking, finely dice your yellow onion. In a large pan, warm up a little oil. Add the diced onion and sauté it until it's lovely and soft, which usually takes about 5 minutes. Then, stir in the fresh spinach and cook until it wilts down beautifully.

In a big mixing bowl, combine your cooked lentils, the sautéed onion and spinach mixture, and the panko breadcrumbs. Grate the zest from half of your lemon right into the bowl. Then, squeeze the juice from the same lemon half into the mixture too. Add salt and pepper to your liking.

Now, form the mixture into about 8 to 10 small patties. Heat a little more oil in a nonstick pan over medium heat. Carefully place the patties in the pan and cook for 3 to 4 minutes on each side. You want them to be golden brown and heated through.
