Creamy Avocado Dream Pasta

This super speedy and incredibly creamy pasta dish is perfect for a quick, wholesome meal.

How to make it

    Bring a large pot of salted water to a boil. Add the dry pasta and cook according to package directions until al dente.

    While the pasta cooks, scoop the flesh from the ripe avocados into a blender or food processor. Add the fresh lemon juice and minced garlic.

    Once the pasta is cooked, reserve about half a cup of the starchy pasta water. Drain the pasta well.

    Add about 1/4 cup of the reserved pasta water to the blender with the avocado mixture. Blend until completely smooth and creamy. If the sauce is too thick, add a little more pasta water until you reach your desired consistency.

    Return the drained pasta to the pot. Pour the creamy avocado sauce over the pasta. Add the halved cherry tomatoes. Toss everything together gently until the pasta is evenly coated and the tomatoes are mixed in. Taste and add salt and pepper if you like. Serve immediately and enjoy your delicious dairy-free meal!
