Pat the chicken breasts dry and season them generously with salt and pepper. Heat a little oil in an oven-safe skillet over medium-high heat. Sear the chicken for about 4 to 5 minutes per side until golden brown.

Transfer the skillet to a preheated oven at 375°F (190°C) and bake for another 8 to 10 minutes, or until the chicken is cooked through. The internal temperature should reach 165°F (74°C). Let it rest for a few minutes before slicing.

While the chicken bakes, combine the crumbled feta cheese and plain Greek yogurt in a small food processor or blender. Add the juice from half of your fresh lemon. Blend until wonderfully smooth and creamy. Taste and add more lemon juice if you like.

In the same skillet you cooked the chicken in (or a clean one), quickly wilt the fresh baby spinach over medium heat for about 2 to 3 minutes. Just until it is tender and bright green.
